I first began my love of baking as a small child. By the age of 18 I was working as a chefs assistant and pursuing my dream to become a pastry chef. Life though, had other plans for me and I was taken off course into a corporate career. Throughout the past 25 years, I have maintained my love of baking and my passion for creating sweets and desserts has never waivered.
I have also been deeply immersed in the artistic world for my entire life, in many forms but primarliy in the design field. I have a significant body of work in both the interior design and web and graphic design arena.
Naturally, when my creative, artistic side meets my inner pastry chef, this makes for a visual and gastronomic match made in heaven!
For the past few years, I have been honing my craft in cake decorating alongside perfecting many of my own unique cake and macaron recipes to bring a different offer to the local marketplace.
I have carved out a niche in the premium (or gourmet) end of the cake decorating market. I use only the very best ingredients available, (for example...premium couveture or belgian chocolate in all my cake batters, ganaches and fillings), always 100% fresh (and where possible, striaght from the farm) ingredients and bake all my products entirely from scratch.
In addition, I also hand make every single filling, suace and syrup that goes into each and every one of my bespoke cakes and do not use anything premixed, ready made or 'budget' at all in my ingredient list.
This does mean that my cakes are certainly not the cheapest around, but I guarantee they are higher quality and undoubtedly more full, moist, rich and flavoursome than those cakes being provided by many other decorators - or even many well known bakeries and pattisseries. My cake are indeed gourmet delights!
Did you know many other businesses use 'naked' cakes - baked off site by a third party and they just 'decorate' them for you and claim them as their own? Ever been to a party where the cake looked great, but when you actually ate it, it was mediocre? Did you know those cakes you will find at much cheaper prices are very likely to be packet cake premixes - much like you can buy in a box on your supermarket shelf? Full of artificial ingredients, preservatives and yucky chemicals! Even those sold in many 'boutique' commercial outlets around town actually use premixes in order to maintain output volumes. Tihs makes them not really much different from a supermarket cake - only with better decorating and inflated prices!
I spend many, many hours working on each and every one of my cakes - from the quality ingredients and perfecting recipes, to the simply divine sauces and syrups which are made from fresh berries, real vanilla beans, quality alcohol and premium chocolate. If you are wanting a truly superior flavour cake, with the additional indulgence of lashings of fresh, homemade fillings and drenched in beautiful silky syrups, then my cakes will certainly meet that requirement. AND they look fantastic!
Being the perfectionist I am, I take great pride in the aesthetic quality of all my works - and my cakes are certainly no exception.
I urge you to shop around. When you find cheaper options... ask some questions.
- Do you bake entirely from scratch? Do you use a premix batter - or has someone else baked the cake?
- Can you list off the ingredients for me?
- What brands have you used in the cake?
- Couveture or compound chocolate?
- Can you provide a tasting for me? etc etc
So, if you are looking for a cake whose good looks are only surpassed by it's flavour - I assure you my cakes will not disappoint. Once you have compared a That's Sweet! cake to a cheaper option, I am sure you will agree there simply is no comparison at all!
