Today was Melbourne Cup Day - the "race that stops the nation". All is stopped me from doing was sleeping in to my usual wake up time :) I decided I'd rise super early and make a bunch of pretty truffle pops to take into work. I had a bit of left over cake from the wedding cake I did last weekend, so used this to create these pretty Dark Cherry Ripe Truffle Pops.
Cake pops have been around for a while now - with almost every two dollar discount store selling some kind of 'kit' to make your own at home. Naturally, it's all about the taste for me - so no $2 cake pop kits for me! This truffle mix was made from my popular Very Cherry Cherry Ripe cake with belgian chocolate ganache, cherry brandy and coconut liquer. Very rich and indulgent!
You can probably see that these aren't quite perfect....but after yet another night this week of less than 6 hours sleep - I was loathe to drag my butt out of bed any earlier than I had to! So - I threw these together at 5am this morning. Judging by the quickly emptied plate at work today - I think it was worth it :)
